Amarula Malva Pudding recipe for Christmas!

The Groot Sleutelfontein kitchen staff have given a twist to the classic South African Malva Pudding.  We call it “Amarula Malva” and recommend it for your Christmas table this year.  This well-received recipe is often served to guests at our four star lodge.

What you need:

1 cup sugar

1 egg

1 tablespoon apricot jam

1 cup flour

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

1/4 teaspoon table salt

1 teaspoon white vinegar

1 cup milk

Method:

Beat the eggs and the sugar well in a mixer.  Add the jam.  Sift the flour, bicarbonate of soda, baking powder and salt together.  Melt the butter and add the milk and vinegar.  Alternately add this wet mixture with the flour to the egg mixture.  Beat well.  Bake in a covered dish for 1 hour at 180ᵒ Celcius.

Sauce:

1 cup whipping cream

100g butter

1 cup sugar

1/2 cup hot water

1/2 cup Amarula Cream Liqueur

Method:

Melt together all ingredients for the sauce and pour it over the hot pudding when the pudding is fully baked.  Serve with custard.
